Hearty and healthy

I love chili but sometimes you just need a little change of pace. A family member mentioned that she had made a chili dish using ground chicken and buffalo sauce and it was delicious. I set out to create the perfect recipe.

Ingredients

  • I lb. ground chicken
  • 3 stalks celery - diced 
  • 2 15 oz. cans white beans
  • 2 15 oz. cans black beans
  • I 15 oz. can fire roasted tomatoes
  • 1 bag of frozen corn
  • 1 diced onion - large
  • 2 diced bell peppers
  • 1 diced poblano pepper 
  • 4 (ish) garlic cloves - minced
  • salt and pepper to taste
  • 1 8oz. bar of cream cheese
  • 1/2 cup buffalo wing sauce (plus some extra to serve it with) I use Franks's wing sauce
  • 1 4oz. can green chiles 
  • 1-2 32 oz. chicken broth (depending on how soupy you like it or how much space you have in the crock pot)
  • 1 packet of ranch dressing mix
  • 1/2 tsp dried cilantro
  • Tbs. olive oil

Directions

  1. Brown chicken in a skillet with a little olive oil, salt and pepper, and about 1/3 of the diced onion. Add to crock pot.
  2. Sauté veggies a little with the garlic and add to the crock pot. Don't over do it or they will be limp. It does help take the heat out of the poblanos a little bit and I really only do this because we have kids and they don't like really hot things.
  3. Drain and add the beans.
  4. Add the chiles, tomatoes, chicken broth, buffalo sauce, dried cilantro, and mix in the ranch dressing mix.
  5. Add the block of cream cheese to the top and cover.
  6. Cook on high for four hours or low for eight hours. Stir in the cream cheese and serve with additional wing sauce.

I have also found that when I want to make a larger batch (to last all week) that I can make this easily on the stove top in a big soup pot. It is one of my favorite winter recipes because it is so healthy and hearty. It's not too hot for my kids, and I always add some additional Franks Red Hot to mine. YUM! Today I made this with a little twist. Since it is Sunday and I'm home and have the extra time, I made a large batch to last us during the week. I added extra veggies, beans, and broth and used my medium sized soup pot. Since I added the veggies right to the pot after I browned the chicken, I wanted to make sure I tamed the heat but still captured the flavor of the poblanos. I roasted them under the broiler for about 4 mins on each side. When they were done, I diced them and added them to the pot with the beans and broth.

Buffalo chicken chili is one of my favorite winter recipes because it is so healthy and hearty. It's not too hot for my kids, and I always add some additional Franks Red Hot to mine. YUM! I hope you enjoy it as much as we do.

I simmered this on low for 2-3 hours and added the cream cheese about half an hour before I served it.
